each event will be an ōdē to seasonal and fresh ingredients
an ōdē is an elaborate lyrical poem used in ancient greece to celebrate a triumphant event or an individual
the poem is divided into three parts:
the strōphe (beginning),
the antistrōphe (middle),
& the epōde (end)
by creating individual plates and portions, ōdē can better ensure that the least amount of food is wasted
all veggie scraps are used to make broth
all bones are used to make broth & jus
buying local , reducing plastic waste at the individual level, sourcing from small & homegrown businesses where possible
by committing to the use of seasonal ingredients and ethically & sustainably sourced proteins, ōdē ensures a circular experience;
all meat is sourced from ethical & sustainable butchers
all fish is sourced from local markets & fishermen
in collaboration with lutum ceramics -
